Handy Tip: When making Ahi Tuna, you want to just barely sear each side of the tuna, so it serves up nice and pink  and rare. To make an impressive looking side of crispy “noodles”, deep fry wonton skins (shown). Larger egg roll wrappers look very elegant when cut on the diagonal (in triangle halves) before frying.
