Weird as it looks, this Easy, No Cook
Coconut Milk & Chia Seed ‘Pudding’
is pretty dang tasty. I licked the bowl clean!
In a bowl, I used 1 cup coconut milk (or almond milk), added 3 Tbsp of chia seeds, 1 Tbsp raw honey and 1/2 tsp vanilla. Stir.
Let sit out for an hour, stirring every so often. Then put in the fridge for another hour, or more.
Before serving I stirred in some diced mango and mini all natural chocolate chips. Also try it with berries, chopped pineapple, peaches, shredded coconut, bananas, lemon or mint extracts… Be creative and experiment with your own combinations!
Makes 4 small servings
