A friend posted a recipe on Facebook that caught me eye.

All Natural. Check. Had the ingredients already. Check. (well, close enough to make it work)

So today, I made my first ever Coconut Cream Pie!

Spiced Apple Raisin Filling

There are fresh apples, golden yellow raisins, and an array of aromatic spices in the kitchen,

simply begging to become something scrumptious together.

“Hmm. What can we make?” I asked. The little light bulb went on. ūüôā

“I bet a raisin & spice variation of our Warm Apple Compote could be very goooooood!”

Bruce wholeheartedly agreed… So, we tried it!

It came out so yummy, we are sharing this delicious version with you!

Spiced Apple Raisin Filling & Compote

Total Prep & Cook Time: 15 Minutes * Yield: 2 Cups of Filling

* Ingredients: 

All Natural Ingredients

All Natural Ingredients

4 apples, peeled, cored and sliced thin

1/2 cup yellow raisins,

1/4 cup sugar (or stevia)

2 Tblsp unsalted butter

3/4 tsp cinnamon

1/4 tsp cloves

1/8 tsp nutmeg

2-4 star anise (optional)

Apples, Raisins & Spices

1/2 tsp vanilla

Pinch salt

* Method:

  1. Saute sliced apples in butter until apples start to wilt (do not burn)
  2. Add sugar, and cook until sugar melts and starts to form bubbles
  3. Add raisins, salt, vanilla and spices. Cook until all boils, reduces and thickens. Turn off flame and remove from heat.

Mmmm, That’s It!

Ours became a filling for Spiced French Apple Tarts, baked in basic pie dough.

Spiced Apple & Raisin Filling

to stuff crepes, fill turnovers & pies,

as a topping for pancakes & waffles, or try it over vanilla ice cream!

Frozen Mini Peanut Butter Cups

**   Making Chocolates with Coconut Oil, Part Two**

In my last post, I told you how good making my butter creams recipe turned out using coconut oil instead of butter.

Well, this weekend I gave it a go making Peanut Butter Cups (or Bites) using coconut oil.

They came out DELICIOUS! So I am here today to tell you to try it!

It took me about an hour to make 30 mini candies.

Making approx 24 bites instead (see photo below) would take less time.

First, Make The Chocolate Recipe, as Posted in part one. (  or Click HERE)

Hand Rolling the Peanut Butter Bites

 Next, make HALF the PB Mixture in the PB BITES RECIPE BELOW ** NOTE! I made just HALF of the posted PB recipe. Рusing only 1/2 cup each of PB & sugar, and 1 TBSP coconut oil.

To make poured candy in molds or ice cube trays, like I did above, spoon a tiny bit of chocolate mix in the molds, and fridge for 5 minutes. ( if hand rolling PB Bites, omit this step )

Make the PB mix a bit loose, so you can spoon it in the mold over top of the chocolate. leave a little room at the top.

 If either the pb mix or the chocolate mix is too loose, add a little more sugar. If it is too firm, add a touch more coconut oil.

Not too much – a little coconut oil goes a long way!.

Cover the PB mix with a bit more chocolate mix.

Fridge or freeze 30 minutes to overnight That’s it! You have amazingly delectable home made chocolates!

So about an hour ago, Bruce said “I want Dessert”. I said “We don’t really have anything.”

He said there’s two apples left. I saw spring roll wrappers in the freezer,

a can of condensed milk…we looked at each other, and then… this happened:
“Spiced Apple Spring Rolls” with Vanilla Sauce!

Three Words this time: Oh. Em. Gee!

Spices: Sugar, Cinnamon, Mace,Vanilla, Cloves & Sea Salt

These only took 30 minutes start to finish.

Made with our own Easy Apple Compote Recipe and packaged Spring Roll Wrappers, these babies are sweet, warm and juicy.

Warm Spiced Apple Compote Filling

I just “winged” the Vanilla Sauce using a little sweetened condensed milk, almond milk,¬†a liberal amount of vanilla extract, and sifted powdered sugar, warmed over a double boiler.

Delicious Honey-Almond Cream Puff Eclairs

Here we have a variation that Bruce made using his Home Made Eclair Recipe.

The chocolate ganache topping has been replaced with Toasted Slivered Almonds. (* see note), Then heat honey mixed with a small bit of water (so it doesn’t burn) on the stove top till warmed and thins out. Drizzle honey mixture liberally over the almond covered Eclair.¬†Garnish with fresh berries, and‚Ķ

Two Words: OH YUUUM!

*How To Make Toasted Almonds: Place slivered almonds in a dry non-stick saute pan over medium heat. Stir almonds in pan with wood spoon until the edges turn golden brown, about 5 minutes.

Since Apple Season is in ‘Full Swing’ here in the Northeast US, I thought it seemed timely to post an Apple Recipe! Warm Apple Compote is pretty easy to make, yet delivers big on taste. Use this versatile filling with your favorite desserts or pastry recipes.

Easy Warm Apple Compote & Filling

Total Prep & Cook Time: 15 Minutes * Yield: 2 Cups of Filling

* Ingredients:

All Natural Ingredients

2 Tblsp unsalted butter

2 Tblsp sugar or Honey

1/2 tsp cinnamon

Pinch salt

1 tsp corn starch or tapioca flour, mixed with 2 Tblsp water

* Method:

  1. Saute sliced apples in butter until apples start to wilt (do not burn)
  2. Add sugar or honey and cook until sugar melts and starts to form bubbles
  3. Add salt, cinnamon and corn starch slurry and cook until all boils. Turn off flame and remove from heat.
